The video is obviously fake. The videographer, most probably Misraq, on purpose faked it to embarass Whorus. He did not show the two guys washing their feet before pressing down on the qocho to compact it so as to make space.

Honestly speaking, I did not see mom and billage ladies doing this stomping. If they did, it's to compact it it to make space so that they can add more. 100% a given, tgey will wash their feet.

Wet qocho forms acetic acid as it goes through fermentation or breakdown of organic cells, death of organic cells, decomposition of organic cells, which is what we smell. It's not pleasant like all acids are not.

But by drying qocho, the fermentation can be avoided; thus no acetic acid is givennoff, thus no smell.
Also, once dried, it can easily packaged into bags for storage and transportation.
