Skills like this are the basis for industrialization. The skills of mass production at the moment is by intensive labor. But at least of the production process can be mechanized. 1)baking, 2)drying, 3) storage
1)baking: she needs a mixer, something like a blender but large size
2)Drying: she needs a kiln. For fire, she can use eucalyptus logs Ethiopia is rich with eucalyptus trees
3)storage, she needs shelves. Until she can afford to buy a forklift, a used forklift may do, she can use mobile ladders.

She should get insights from similar industrialists. It's called networking. I ma surre she knows her competitors. Like the lady in this link repairs pots and has shelves to store her clay products.

Kilns are very similar bakeries. A 3D rectangle made of bricks with a door at the center. Throw in a pile of fire wood, spray it with a little kerosine or instead dry grass to start the fire. Shut the door and shut the housing. When the bricks start warming up, the clay jars, cups, plates,pots, etc. start drying.

It breaks my heart they use carbon steel senda to slice qocho. Carbon steel or iron rusts and is toxic to human health when it mixes with food. Stainless still doesn't rust; therefore safe. Senda must be made from SS(stainless steel).
