Without Amara Ethiopia is nothing. but it doesn't work the other way: Ethiopia without welayta or Tigre or ... will continue as Ethiopia. Traditional food that we are seeing or talking is literally Amara's preserved heritage for thousand years.
Tigreans are notorious thieves, only blessed for stealing. Now they are making noise in pretext of independence but the matter of the fact that they can't sustain without stealing or getting help from Amara. From now on, their fate will completely depend on their sweat that we will be attested 10 years later.
For thousand years Amara knows how to prepare fermented Injera and bread. this is really amazing, Ethiopians knew how to make bread similar to the one we are eating today without using yeast. but most countries are still making staples from wheat flour, simply that is not fermented. India and Iran are good examples.
I was just collapsed seeing the video on welayta's food presented to the world. Probably months back I opened a thread on "food around the world", I posted one Ethiopian food. Around the world different countries passionately and eagerly waiting to show their traditional food to the world. on that earlier video, Mark Wein was guided by one welayta man to show Ethiopian food to the world. I am a little bit annoyed because I am feeling that the welayta's man was responsible for guiding this man to slum to show our traditional food. Contrary to this, other countries with great preparation they wait mark wien and others in standard restaurants. Sadly the same welayta's man guided the Mark Wein to show welayta's food. What did they invite him? Only porridge!
But I was relieved seeing more progressed video on Ethiopian traditional food again. Mark Wein was guided by a different guy, and it was amazing experience. I appreciate the host and Mark Wein for their endeavor.
By the way Ethiopia has so varieties of food preparation methods. We have quite different types of stews made from diffferent compositions. "doro wot" is just one among many.
